Valentine’s Day Dunkaroos

Nothing says I love you more than throwing back to your favourite recess snack, Dunkaroos! Picture it, sitting down to Black Mirror with your honey, dunking these serious vanilla flavoured cookies into an even more serious vanilla buttercream studded with cute heart sprinkles. Love. 

I am still looking for confirmation if the dunkaroos of Australian youth’s had the crushed hazelnuts separate to the strawberry/vanilla/hazelnut dip? My memory isn’t working and my brother won’t reply to my text message. Please advise. They’re all mixed in together here for maximum cuteness, but you could totally keep the buttercream separate to the sprinkles and dip for fun.

Valentine’s Day Dunkaroos

Serves 4

Ingredients

For the Cookies

  • 125g unsalted butter, softened
  • 1/2 cup sugar
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 large egg yolk
  • 1/4 tsp fine sea salt
  • 1 1/2 cups plain flour
  • 1 tbsp love heart sprinkles (or any other sprinkles)

For the buttercream

  • 125g unsalted butter, at room temperature
  • 250g icing sugar
  • 1 tsp vanilla bean extract 
  • 1 tbsp strawberry jam (seeds removed via a fine mesh strainer)
  • 1 tbsp love heart sprinkles (or any other sprinkles)

Method

  1. Place the butter in the bowl of an electric mixer and mix on a medium speed for one minute. Add sugar and continue to mix until pale. 
  2. Add the egg yolk, salt and vanilla and beat on a medium speed, scraping down the sides of the bowl as needed. 
  3. Gradually add the flour while the mixer is on a low speed. Mix until a dough forms. Divide into two then cling wrap and chill for at least an hour. 
  4. Pre heat oven to 180 degrees Celsius. Roll one half off the dough out between two sheets of baking paper until 5mm thick. Cut out cookies with a range of heart shape cutters. Repeat with other batch of dough, but sprinkle with sprinkles and gently press in with rolling pin before cutting cookies. 
  5. Place cookies on a lined baking tray and bake for 8-12 minutes or until slightly golden. Remember, the smaller cookies will bake quicker. Allow to cool.
  6. To make the buttercream, beat butter in the bowl of an electric mixer and mix on a medium speed for one minute. Add the icing sugar and beat until pale and fluffy. Add vanilla and jam and beat until combined. Fold through sprinkles. 
  7. Assemble Dunkaroos in the container of your choice with the buttercream on the side. Add some more sprinkles to the top of the buttercream!
