So here we are, two days away from 2015. And I have absolutely no idea what I am doing for New Years Eve. No surprise really, this happens every year. Endless options but, I just can’t make a decision. Plus, I am a bit sick. Does this mean I have permission to stay home?

Wherever I go though, I hope I am drinking a Thyme and Blackberry Fizz. It’s a simple champagne cocktail that will have you feeling smug about your cocktail making prowess right into 2015. Just a little berry crushing and you are away. Look at you.

Ingredients
  1. 10 blackberries
  2. 4 tsp icing sugar {more or less depending on the sweetness of the berries}
  3. 3 sprigs of thyme {two for garnish}
  4. 300mL of any type of chilled, sparkling wine
Instructions
  1. Place 5 blackberries, a pinch of the fresh thyme leaves that you've rubbed and squeezed, and 1 tsp of icing sugar in the bottom of two glasses.
  2. Use a muddling stick {or fork, rolling pin, spoon etc} to squash the berries until smooth.
  3. Top the berry mix with the sparkling wine and serve!
Notes
  1. Try this with any berry or any herb- raspberry/mint or strawberry/basil would be amazing!

      I did stay at home! But too sick to be drinking these. It’s OK though, still 3 more weeks of holidays! x

    Oh yum. I can’t wait to try this nifty little drink out. I do like Prosecco and I’ve recently found a sparkling Sav Blanc I quite enjoy, so the sparkle situation should be sorted! thanks for the great recipe 🙂
