I’ve been meaning to buy a big ol’ cast iron skillet and cook up a pan full of Shakshuka for like, years.  But you see, you need a fair bit of time and lots of people to feed, which are two things that have never really happened.

A couple of weekends ago, I decided to let go of that dream and make Shakshuka just for me. But I wanted it fast. Which I mastered. I think it took me about 15 minutes and two dishes. Which is pretty good in the weekend breakfast stakes. Especially when baked eggs is involved.

  1. 1 cup passata {tomato puree}
  2. 1 tsp smoked paprika
  3. Pinch cayenne
  4. Salt and pepper to season
  5. 1 egg
  6. 20g feta cheese
  7. spring of coriander
  8. Pita bread or sourdough bread to serve
  1. Preheat the oven to 180 degrees Celsius.
  2. Place the passata and spices in a small saucepan and heat until boiling.
  3. Season to taste.
  4. Place the tomato sauce in a ramekin and crack the egg into the sauce.
  5. Bake in the oven for about 10 minutes- make sure the egg doesn't overcook!
  6. Garnish with coriander and feta.
  7. Serve with bread.
  1. You can easily increase the ingredients to serve more people!
