Tomato soup just tastes like my childhood. Mum usually made pumpkin and chicken soup from scratch but she always bought tomato soup from a tin. Which was OK by me. I thought it was pretty damn tasty.I couldn’t tell you the last time I ate tomato soup. But, one day, a couple of weeks ago I found myself with a severe craving for it.

I drove out to my fruit and veg guy and they had two kilos of heirloom tomatoes for four dollars. This was super exciting, even for me who doesn’t eat raw tomato.

After poking around, I came with what I thought would be a killer recipe for roasted tomato soup. I make it and just like that I was bought back to childhood. It was definitely a fancier childhood with the lovely roasted tomato flavours and the addition of fragrant thyme.

Ingredients
  1. 1 kg ripe tomatoes
  2. 2 cups chicken stock
  3. 2 small carrots
  4. 1 onion
  5. 2 cloves garlic
  6. 4 sprigs thyme
  7. 1 tsp sea salt
  8. 2 tablespoons oil
  9. cream and pepper to serve
Instructions
  1. Pre heat the oven to 180 degrees Celsius.
  2. Halve the tomatoes and place on a lined baking tray. Cover with the thyme sprigs.
  3. Drizzle with 1 tablespoon of olive oil and salt and roast for an hour.
  4. Place the remaining oil in the base of a large saucepan and heat on a medium heat.
  5. Chop the onion, carrot and garlic and place the the hot oil.
  6. Saute until slightly brown and soft.
  7. Add in the tomatoes, thyme and chicken stock and simmer until the tomatoes break down.
  8. Remove the thyme stalks and place the soup in a blender {or use a stick blender} and blend until smooth.
  9. Return the soup to the pot and heat until boiling.
  10. Serve the soup with some cream and pepper.

    I was never a fan of tomato soup as a kid however now I love it and this one in particular looks pretty good. Will be making this as I have 10 kilos of tomatoes sitting on my table from the garden this week. I did love potato and leek soup as a kid – blended not chunky. mmm – it was so thick you could stand a spoon up in it.

    This looks absolutely delicious – I love the idea of using fresh roasted tomatoes rather than canned. With some crusty bread and olive oil it would be a perfect winter dinner, so will definitely be trying it out! 🙂
