Welcome back to Work Salad Wednesday! I had a lot of feedback last week from people who were also in a lunch rut. It’s always so nice to know you’re not alone. Especially when it comes to lunch. I have to say I am so excited about this week’s salad. Quinoa Fattoush. I have been obsessed with fattoush since buying my first bag of sumac about a year ago. I know you will fall in love with it too.

In case you were wondering, no, the fattoush does not usually have quinoa as an ingredient. Traditional Lebanese folk were not quinoa savvy. I added it to make a more wholesome salad. Quinoa has a tiny bit less carbohydrate than rice {contrary to popular belief}, double the fibre and double to protein. It’s definitely a great ingredient to round out your salads or soups and keep you satisfied.

The crispy bread, sour lemon and fresh parsley all work wonders together to help the quinoa in the salad shine. Let’s face it. Quinoa sometimes can taste like dirt. The sumac {a spice} here is pretty essential, but can be a pain to find. Honestly though, bump up the lemon and add a little garlic and no one will know.

FOR THE SALAD
  1. 1 cup of cooked quinoa {about 1/3 cup raw}
  2. 1 piece of Lebanese bread
  3. 2 tablespoons of olive oil
  4. 1/2 red onion
  5. 1 cucumber
  6. 6 cherry tomatoes
  7. 1 cup of flat leaf parsley, roughly chopped
FOR THE DRESSING
  1. Juice of 1 lemon
  2. 2 tablespoons of olive oil
  3. 1 teaspoon of salt
  4. 1 teaspoon of pepper
  5. 1 teaspoon of sumac
Instructions
  1. Heat a grill or fry pan on a high heat and brush both sides of the Lebanese bread with olive oil.
  2. Place in the pan and cook on both sides until charred and crisp. Remove and allow to cool.
  3. Halve the cherry tomatoes, slice the onion finely then halve and slice the cucumber.
  4. Place all of the ingredients in a mixing bowl and lightly toss.
  5. Top the salad with all dressing ingredients.
  6. Break the Lebanese bread into bite size pieces, add to the fattoush and lightly toss.
  7. Serve immediately.

      Whoops- I meant to include that in the recipe! The bread definitely needs to stay crunchy.

    I remember my mouth watering when I saw this on Instagram. I love a fattoush salad and I just so happen to have some leftover quinoa in the freezer – so I think this salad was meant to be. I think I may well be the envy of the lunch room at work next week!
