I love a holiday breakfast. You know, the one where you wake up late and think about what you actually want to eat over coffee then eventually get around  to making it. Real, slow food.

I’ve been back at work for a few weeks now and I am missing these holiday breakfasts. Instead, I’m having toast with avocado or tahini. Today I had Nutella though, you know, to keep it real.

I have been thinking about some ways to mix it up and make it feel like holidays when in reality I’m smack bang in the middle of term 1. Then I remembered an amazing breakfast my friend Jess made me- A Quinoa Breakfast Bowl. It was actually on holidays, but it’s so quick and easy that it perfectly translated to mid week too.

Whoever said you shouldn’t have garlic and chili for breakfast, doesn’t know what’s up. This bowl is seriously so delicious and you won’t get over how simple it is. As a bonus, it’s nourishing and uses leftovers. WIN.

Quinoa Breakfast Bowl

  1. 3/4 cup cooked quinoa {I cook it according to the absorption method}
  2. 1/2 red chilli, sliced
  3. 1/2 garlic glove, sliced
  4. 1 spring onion
  5. 1 egg
  6. 1/4 avocado, sliced
  7. 1 tsp soy sauce
  8. 2 tablespoons olive or coconut oil
  1. Heat 1 tablespoon of oil in a large frying pan on a medium high heat.
  2. Add the garlic and chili and fry until fragrant.
  3. Add the quinoa and cook until heated through.
  4. Add half the spring onion and the soy, toss then place in a bowl.
  5. Heat the remaining oil in the pan and fry the egg to your desired cooking.
  6. Serve on top of the quinoa, garnish with the remaining spring onions and a side of avocado.

    That looks great! I’m a vegimite toast kinda girl on the days I work or need to be out of the house early. Otherwise I don’t mind poaching some eggs or making pancakes with the kids. My ultimate holiday breakfast would be ricotta pancakes with a berry sauce and ice-cream! Yum xx
