Sara from Cake over Steak {the writer of a COOL food and illustration blog} is hosting possibly the best thing ever today: a #virtualpumpkinparty.

A few weeks ago, she sent me an invitation and it seriously made my heart skip a beat. Unlike my recent 10 year high school reunion and quicker than you can say gourd, I RSVP’d a big fat YES! 

Each year I am overcome with pumpkin related FOMO as the northern hemisphere taunt me with their delicious pumpkin treats. There was no time for that this year though, I had to get recipe testing for my contribution to the #virtualpumpkinparty. I couldn’t be that person whose bring-a-plate contribution is usually water crackers and cheese cubes. Nope.

I decided waffles were a must because my new waffle maker needed it’s cherry popped. There is no better way than breaking in a waffle maker than with pumpkin waffles, right?

These waffles are a little bit sweet and spicy with lots of flavour from the rye flour and pumpkin. The pumpkins in Australia are still great quality at the moment, so I give you permission to deviate from the norm and continue cooking with those sweet pumps.

I’ve topped them with a super easy vegan coconut caramel. Did I tell you coconut caramel is my new favourite thing? ‘Cause it is.

WAFFLES
  1. 1 cup pumpkin puree {I made my own because Australia is canned pumpkin free. Roast half a pumpkin, scoop and puree}
  2. 250mL milk
  3. 2 large eggs
  4. 60g coconut oil, melted
  5. 1 1/2 cups plain cake flour
  6. 2 cups rye flour
  7. 2 tsp dry yeast
  8. 1/2 cup brown sugar
  9. 1 tsp ground ginger
  10. 1 tsp ground cinnamon
  11. 1/2 tsp all spice
  12. 1/4 tsp ground clove
  13. 1/4 tsp ground nutmeg
  14. 1 tsp salt
COCONUT CARAMEL
  1. 1 cup caster sugar
  2. 190mL coconut cream
  3. 1/2 tsp salt
FOR THE WAFFLES
  1. Place the flours, sugar, yeast, salt and spices in a large mixing bowl.
  2. Place the eggs, pumpkin and milk in a small mixing mixing bowl and whisk to combine.
  3. Add the pumpkin mix to the dry ingredients and whisk to form a batter.
  4. Add the melted coconut oil and whisk to combine.
  5. Allow the batter to sit out for two hours until bubbles form and the mix inflates.
  6. Give the batter a whisk and place in the fridge to chill over night. You could cook it immediately, but resting overnight really gives it great flavour.
  7. Cook the batter according to the instructions with your waffle maker.
FOR THE CARAMEL
  1. Place the sugar in a heavy based saucepan and heat on a medium heat.
  2. Once the sugar is caramelising with only a small amount of sugar crystals left, remove from the heat and add the coconut cream.
  3. Return to the heat and simmer while whisking until the caramel in combined.
TO SERVE
  1. Drizzle that caramel over the waffles. Butter would be good too!

    Your coconut caramel looks amazing, so much better than any of my attempts! I think you have a good thing going on with adding some caster sugar into the mix. These look like pure heaven, may I please steal your waffle maker?

    With you on the pumpkin FOMO Erin being down in the Southern hemisphere!! At least we have ALL the strawberries, asparagus and warm weather coming. Your coconut caramel is awesome – absolutely love the idea of a coconut flavour and something slightly healthier than the usual hugely butter, creamy caramel we end up making! X
