 The first time I tried preserved lemons, my mind was blown. How could lemons that have been sitting in salty water taste so good?, was my question. I don’t care, just make some ASAP,was my answer.

My friend once made me an epic chermoula chicken tagine thing with preserved lemon. I’m going to try and make it Saturday night with these babies I made about a month ago. The process is so simple and if you made some now, you’ll have some pretty special gifts to give out Christmas Day.

Ingredients
  1. 6 lemons to preserve
  2. 10 lemons to juice, depending on their juiciness
  3. 6 tablespoons of rock salt
Instructions
  1. Make a cut lengthways down the middle of the lemons, keeping one end in tact.
  2. Rotate 45 degrees and make another lengthways cut, again keeping one end in tact {See picture above}.
  3. Rub in one tablespoon of salt into the pulp of the lemon then place in a 1 L glass jar.
  4. Repeat with the other 5 lemons.
  5. Juice the remaining lemons and cover the lemons with the lemon juice.
  6. Top with the lid and allow to sit for a month.
  7. Keep refrigerated.
