Peanut Butter and Banana Granola

I don’t really like the word granola. I’ve always used the word muesli. Granola is so American {not that there is anything wrong with American}. I decided that this was granola. I think it’s the crispy, golden clusters that make it a granola, rather than a muesli. This granola is flavoured with a mashed banana and it’s life- changing.



Banana Peanut Butter Granola {Adapted from See Anna Jane and Green Kitchen Stories}

(Makes almost 3 cups)

You will need:

  • 2 cups of rolled oats
  • 1/3 cup pepitas
  • 1/3 cup chopped pecans
  • 2 tablespoons of coconut oil
  • 2 tablespoons of natural peanut butter
  • 2 tablespoons of maple syrup
  • pinch of salt
  • 1 large ripe banana, mashed
  • 1 teaspoon of vanilla extract

What you need to do:

  1. Pre heat the oven to 160 degrees Celsius and line a baking tray
  2. Combine oats, pepitas, pecans and salt in a large bowl
  3. Melt the coconut oil, peanut butter and maple syrup in a small saucepan until combined
  4. Remove from the heat and add the mashed banana and vanilla
  5. add the wet ingredients to the dry and stir to combine
  6. Spread over the baking tray and bake for about 40 minutes, stirring a few times (make sure the granola is well toasted with no “wet” banana chunks)
  7. Store in an air proof container for up to two weeks
