Pavlova Sundays. I mean Sundaes. Just quietly, how good would Pavlova Sundays be? Each Sunday you would taste test the finest pavs from across the land sans guilt. OK, I’m going to make it happen.

Pavlova is my favourite dessert. I wait patiently for summer each year so I can smash a pav. I tried to make a winter version one year when the waiting got the better of me but poached pears and chocolate just didn’t cut it. Please, passion fruit and strawberries are the only way.

Anywho, Australia Day is fast approaching. Which I have now decided is my least favourite holiday of the year. Who’s idea is it to go back to work the day after? Pffft.

What are you guys up to? Maybe you’d like to make pavlova sundaes with your pals. I’m imagining a hectic station with various fruity toppings, crispy meringues and lots of vanilla ice cream. No poached pears allowed.

Pavlova Sundaes

  1. 2 egg whites
  2. 1/3 cup caster sugar
  1. About 500mL vanilla ice cream
  2. 250g strawberries, hulled and halved
  3. 1/2 tablespoon of sugar
  4. 4 passion fruit
  1. Place the strawberries and sugar in a bowl, stir then allow to sit in the fridge.
  1. Preheat the oven to 120 degrees Celsius and line a baking tray.
  2. Place the egg whites in the bowl of an electric mixer.
  3. Beat on high until white and foamy, about 3 minutes.
  4. Rain in the sugar while continuing to beat on a medium speed.
  5. Once all the sugar has been added, beat on high again for a minute or two until the meringue is thick and glossy.
  6. Spoon 8 even mounds of meringue on a lined baking tray and place in the oven.
  7. Bake for an 1 hour and 15 minutes or until they are cooked to your liking. {About 2 hours for completely hard meringues}
  8. Turn the oven off and allow them to cool in the oven.
  1. Crush the meringues into a jar or bowl.
  2. Top with a scoop of vanilla ice cream.
  3. Place strawberries and passion fruit on top.
  4. Eat!
  1. In humidity, the meringues will soften. Make sure you seal in an air tight container or a zip lock bag.
  2. You could totally buy the meringues if you fancy.
