I’m going to go right out on a limb here and say that chicken soup has to be one of the most adapted recipes, ever. Everyone has their own way of making it: slow cooking, whole chook, breast, thighs, roast first, no roast, vegetables, rice, pasta, stock, dumplings, noodles. The list could probably go one forever.

I feel like I have maybe nailed the quick version of chicken soup though, guys. While I would love to make Sophie Dahl’s version with the Chicken fat croutons {thanks for the reminder, Pip!}, I am sometimes lacking time and patience.

This recipe was born out of a no time or patience moment. My dad was unwell and needed some nourishing food to get him feeling better. I was teaching until 5pm and spent the previous night at the hospital until late. So, I stuck all of these ingredients in a slow cooker in the kitchen at school before homeroom and 5 hours later, it was done.

The next time I made it I wanted it a bit quicker, so I made it in a regular pot and the result was just as good. You could add whatever vegetables you like to this soup. Same goes with the grain. I used barley but brown rice, white rice or risoni {towards the end} would be perfect.

One Pot Lemon and Thyme Chicken Soup

  1. 3 chicken thighs
  2. 1 carrot, chopped
  3. 1 onion, chopped,
  4. 2 celery stalks, chopped
  5. 4 stalks of thyme
  6. 2 cloves garlic, minced
  7. zest of 1 lemon
  8. 500mL chicken stock
  9. 750mL water
  10. 1/3 cup barley
  11. 1 tsp salt
  12. 2 tbsp olive oil
  1. Heat the oil in a large heavy based saucepan.
  2. Sear both sides of the chicken thighs until brown.
  3. Add the vegetables, thyme, lemon zest, garlic, barley, stock and water. Stir to combine.
  4. Simmer for 30 minutes.
  5. Remove the thighs and the thyme stalks and shred with a fork.
  6. Return the meat to the saucepan and serve.
