Lychee and Coconut Sorbet

I love lychees. Ask my friends. It’s my first choice. Every. Single. Time. I had a tin of lychees left over from christmas/ new year festivities and decided I’d turn them into an icy treat. IMG_7134x

IMG_7138xApparently it’s as easy as a tin of lychees and coconut milk and your almost there for a lychee and coconut sorbet. Make this NOW!

Lychee and Coconut Sorbet 

(Makes about 1 litre)

What you need:

  • 1 400ml can of coconut milk
  • 1 560g can of lychees
  • juice and zest of a lime
  • 1/4 cup of sugar

What you need to do:

  1. Put the coconut milk, lychees, lime zest and juice and sugar in a blender and blend until lychees are broken up.
  2. Chill in the fridge until cold.
  3. Churn the sorbet in an ice cream maker following the manufacturers instructions.
  4. Place in a metal container and freeze for at least 6 hours or until firm.
  5. Eat however you like!

    I’ve been seeing lots of fresh lychees lately and haven’t bought any as I didn’t have any stellar recipes to use them in…. well it looks like I have to buy some now! My ice cream maker hasn’t gone into the freezer at all this summer yet and I’m finally really excited to use it again, thanks 🙂
