Lamb Meatballs with Smashed Chickpea Salad I’d like to say the the first month of #useacookbook has been a huge success. But I’d be lying. I’d be lying because I accidentally deleted most of the pictures I took with my DSLR from the SD card before importing them. I’m special, right?

So instead, I am giving you the iPhone version. Sorry about that. What was successful was cooking my way through The Smitten Kitchen Cookbook by Deb Perelman. I made a total of 5 dishes from the book. I loved them all except the frittata. Which may or may not have been severely overcooked.

I kicked it off with the turkey meatballs and smashed chickpea salad. I made them lamb meatballs because I don’t really do Turkey mince. The smashed chickpea salad that I served them with was insane and is my new favourite! You can grab the recipe further down the page.

The star had to be the galette. I made two small Pumpkin and Caramelised Onion galettes from the book instead of a big one. I gave one to my friend that just gave birth. I am a good friend like that.

I love Jamie {who doesn’t} and I love his books. I especially love his enthusiasm and passion for food. I am so freaking excited to cook my way through Comfort Food. Hellooooo, duck lasagne.

Lamb Meatballs & Smashed Chickpea Salad

FOR THE MEATBALLS
  1. 500g Lamb Mince
  2. 2/3 cup fresh breadcrumbs
  3. 1/4 cup water
  4. 1 teaspoon salt
  5. 1 egg
  6. 2 cloves garlic
  7. 1/2 tsp ground cumin, ground coriander and cayenne
  8. Olive oil, for cooking
FOR THE SMASHED CHICKPEA SALAD
  1. 1 can chickpeas
  2. 1/2 cup pitted and halved green olives
  3. 1/2 tsp sumac
  4. 1 cup chopped parsley
  5. 1/2 garlic clove, minced
  6. 1/4 tsp cayenne pepper
  7. 1 lemon, juiced
  8. 1/2 tsp salt
  9. 2 tablespoons olive oil
FOR THE MEATBALLS
  1. Place all ingredients in a bowl and mix with your hands until well combined.
  2. Use a tablespoon measure to scoop even sized balls and place them on a tray or plate.
  3. Coat a non stick pan in olive oil and heat on a medium heat.
  4. Once the pan is warmed, cook the balls in batches until cooked through. You can warm them in an oven if need be.
FOR THE SALAD
  1. Place all ingredients in a bowl and mix, slightly crushing the chickpeas.
  2. Serve the salad with the meatballs and some yoghurt if you fancy!

    I only have 1 Jamie book but a gew Ottolenghi books.. I have so many lovely cook books I never use so I need to get on board of this.
