I like the idea of a waldorf salad. Every time I have made and ate it though, I have been disappointed. I feel the same about kale. Sure, you may feel all virtuous buying that bunch of organic kale but you can’t do much to avoiding it tasting like soil.

So here I am with a recipe for a Kale Waldorf Salad recipe involving two things I don’t really like. You probably think I’m crazy. However, I am pretty pleased with my reinvention of the waldorf salad. Candied walnuts and sweet, crispy apple balance out the kale and the punchy dressing of this bloody awesome salad. This is the last recipe in the Work Salad Wednesday series. I hope you made friends with salad!

  1. 2 cups of kale
  2. 1/3 cup of walnuts, chopped
  3. 1 tsp of honey
  4. 1 tsp golden syrup
  5. 1 apple, cut into batons
  6. 100g of cooked chicken, sliced {BBQ chook is perfect}
  1. 1 teaspoon of whole egg mayo
  2. 1 teaspoon of whole grain mustard
  3. Juice of one lemon
  4. salt and pepper
  1. Place the walnuts in a small saucepan on a medium heat.
  2. Continue to toss until they brown and smell fragrant.
  3. Add the honey and golden syrup and stir, allowing them to bubble for a minute.
  4. Pour onto baking paper.
  5. Make the dressing by whisking the ingredients together.
  6. Cut the kale into bite sized pieces and place in a bowl.
  7. Add the apple batons, chicken and walnuts to the bowl.
  8. Poor over the dressing, toss and serve!

    I have to be honest and say I’ve never had a Waldorf salad, but as soon as I saw it this recipe had kale I was fated to love it! This is a great lunch idea and the crunchy apple and walnuts sound so satisfying 😀 Thanks for sharing.
