Because as if you haven’t had enough chocolate, right? I made this for my family on Sunday to ensure they had sufficiently gorged themselves on the stuff this Easter holiday. Flourless Chocolate Hazelnut Cake | erin made this

I’m not going to lie, this cake is just like a massive brownie that tastes like nutella. Which is totally OK with me! We ate it with fresh raspberries and double cream. The only option really. I adapted the recipe from a Gluten Free Taste publication.

Flourless Chocolate and Hazelnut Cake (Serves 8)

You will need:

  • 1 cup of hazelnuts, roasted and ground (you could totally use hazelnut meal, too)
  • 6 eggs (you will have 3 whites left over)
  • 150 grams of unsalted butter
  • 1 tsp of vanilla
  • 200 grams of dark chocolate
  • 200 grams of caster sugar
  • 1 1/2 tablespoons of cocoa
  • 20 cm round spring form tin

What you need to do:

  1. Preheat the oven to 180 degrees Celsius, line the base of the spring form tin with baking paper and grease the sides
  2. Melt the butter and chocolate in a saucepan on low then remove from the heat when melted (I am too lazy for a double boiler and never have an issue with direct heat)
  3. Add the ground hazelnuts, cocoa and sugar in a large bowl, reserving about 2 tablespoons of sugar
  4. Separate the eggs and add the 6 yolks to the chocolate mix and beat until they are incorporated
  5. Beat 3 of the egg whites (freeze the other 3) with an electric mixer until foamy then add the reserved sugar and beat until shiny
  6. Incorporate the chocolate mix and the dry mixture in the large bowl and fold in half of the egg whites
  7. Repeat with the remaining half of the egg whites
  8. Place the mixture in the greased tin and bake for about 40-50 minutes or until a knife comes out clean
