I write a lot about the food I ate growing up here. Whether it was Lasagne, Anzac Biscuits or Porridge, my mum spent plenty of time in the kitchen feeding my siblings and me with food made from scratch. Don’t be fooled though, this wasn’t always the case.

Let me just say, I am not here to food shame my mum about the things she would buy instead of make. There are lots of things that I buy rather than make. Puff pastry, pasta and baked beans are a few that I care to share.

Mum would always buy pancake and self saucing pudding mix in a box. It seems as though she wasn’t confident in her baking ability. I’ll admit, it wasn’t her strong point.

Recently when my chocolate self saucing pudding desire hit, I did a bit of a search for a recipe. And sorry mum, but it is EASY. Again, I am anti- shaming, but the woman was making lasagne from scratch almost weekly. How could she not master a pud?

So, I give you the result of my self saucing pudding adventures; Earl Grey and Chocolate Self Saucing Puddings.

My love for Earl Grey is at it’s absolute peak right now with the freezing weather in Sydney. I am living off the stuff. It adds a subtle, floral fragrance and is simply steeped in the boiling that’s poured over the puds.

Earl Grey and Chocolate Self Saucing Puddings

  1. 1 cup self-raising flour
  2. 1/4 cup cocoa powder
  3. 1/2 cup firmly packed brown sugar
  4. 125ml milk
  5. 1 egg
  6. 60 g butter, melted
  1. 1/4 cup cocoa powder
  2. 1/3 cup firmly packed brown sugar
  3. 1 cup boiling water
  4. 2 earl grey tea bags, steeped in the boiling water
  1. Preheat the oven to 180°C.
  2. Grease 4, 1 cup capacity ovenproof ramekins and place on an oven tray.
  3. Sift the flour, cocoa powder and sugar into a bowl.
  4. Whisk together the milk, egg and butter in a jug.
  5. Whisk in the milk mixture to the dry ingredients.
  6. Divide the batter evenly between the ramekins.
  7. Place the earl grey tea bags into the boiling water and set aside.
  8. Sift the cocoa powder into a bowl and add the sugar and stir to combine.
  9. Sprinkle evenly over the surface of the batter in each ramekin.
  10. Pour 1/4 cup of the tea over each pudding.
  11. Bake in the oven for 15-17 minutes.
  12. Serve with cream.

    Puff Pastry is one of those things I always buy but really should have a go at making. I’m a big fan of a good self saucing pud too and have just realised it’s been far too long since I’ve enjoyed one – thanks for the reminder!

    Oh yum!
    I love self saucing puddings. My mom has a great version. She was never the cook in our family, my dad always made dinner and puddings etc, but my mom can make mac and cheese, chicken liver pate, potato salad and self saucing puds like a boss.
    I’m going to see her this weekend, I’m gonna have to grab some of her recipes and attempt to make them. Unfortunately her handwriting is difficult and she tends to write things like 1 Packet Flour because they come in 250g packs in South Africa so I have to convert everything and ask what size certain packets were haha.

    These look delicious Erin and your love of Earl Grey is widely shared! I absolutely love Earl Grey tea, especially on a cold morning.
