I’ve written before about my envy of the northern hemisphere during November. That same envy continues throughout Christmas. Oh, how I long for a White Christmas {next year, please Santa?}. Just once I’d love to have the oven on all day, glaze a ham and drink eggnog {that I am pretty sure I hate} without the 35 degree heat. Am I right?

This is the reason we stick to the no bake desserts in my family. Trifle, pudding and sometimes pavlova. I know you bake the pav, but it can be done the night before when the temperature lowers and you’re only dealing with the 80% humidity.

I got to thinking about some other no bake possibilities for Christmas desserts. How about sandwiching some ice cream between some brandy snaps? The snaps can be baked the night before and you just need your favourite ice cream and dessert is literally seconds away.

Brandy Snap Ice Cream Sandwiches

Ingredients
  1. 100g butter, chopped
  2. 100g golden syrup
  3. 100g brown sugar
  4. 130g plain flour
  5. 2 tablespoons of brandy
  6. Ice cream, to serve
Instructions
  1. Preheat the oven to 180 degrees Celsius.
  2. Place the butter, sugar and golden syrup in a saucepan and heat on a medium head until melted and smooth.
  3. Remove from the heat and add the brandy and whisk {it will bubble up!}.
  4. Whisk in the flour to make a smooth paste.
  5. Line a baking tray with baking paper and spoon teaspoons of the mix onto the tray.
  6. Spread out the paste t make a 4cm circle, ensuring you leave about 7cm gaps between the snaps.
  7. Bake for 8-10 minutes or until dark golden brown.
  8. Allow to completely cool and repeat until all the mixture is used.
  9. Take two cooled snaps and sandwich a scoop of ice cream between them.
Notes
  1. Makes about 20 snaps so you could serve up to 10 people.
  2. I froze the sandwiches and they have kept well, but I think its fun for everyone to make their own.

    This looks delicious. I tried my hand at making brandy snaps awhile back, but love the idea of using them to make ice cream sandwiches.
    And I totally agree, would love to have at least one white Christmas around the fire.
