So say that it happened to be my birthday on Saturday {it was}. And say I could have any cake I wanted {I can}. I would have this cake right here. Banana salted caramel layer cake with dark chocolate frosting. Made for me, by me, with absolutely no regrets.

I had this cake at a belated celebration with my family last night. I topped it with a bunting, ’cause I’m worth it. Watch this fab vid to make one of your own!

This year I turned 27. Twenty freaking seven. I am so unsure of when that happened because I still feel like an irresponsible nineteen year old. In fact, I act like one a significant amount of the time.

Maybe I feel this way because I am not married and I don’t have kids. However, I have found out through talking with people older than me, that this feeling never really goes away. That we will always feel like a carefree teenager pretending to be an adult.

While I don’t always feel my age, I’d still like to think I have definitely grown throughout my 20’s. It’s a bit of a cliché but as I get older I feel like relationships strengthen, self love increases and the dreams I have for myself have become incredibly wild.

These things used to scare me a bit, because I never really wanted to grow up. But lately, things have changed. I am accepting rather than resisting. It’s hard, but I am realising I am no longer nineteen. Damn. A friend recently told me about the TED talk “30 is not the new 20” and it has pretty much changed my life. I’ve added it below, definitely worth a watch if you are a 20 something or know one.

Anyway, let’s get back to the cake, amirite? Moist and sweet banana cake is layered with salty caramel then frosted with dark chocolate frosting. I hunted for a while for the best recipe for each component of my dream birthday cake. The cake was adapted from this one from Ina and the frosting? Martha of course. The salted caramel is my recipe, you can find it here.  Oh. and how freaking beautiful is the cake stand? My best friend’s fiance made it for me.

The cake requires you to make a dam for the caramel. Here are some helpful pictures to do this. Don’t say I don’t look after you.

FOR THE BANANA CAKE
  1. 6 very ripe bananas, mashed
  2. 1 1/2 cup sugar
  3. 1 cup brown sugar, lightly packed
  4. 1 cup vegetable oil
  5. 4 extra-large eggs
  6. 1 cup sour cream
  7. 2 teaspoons vanilla extract
  8. 4 cups plain flour
  9. 2 teaspoons baking soda

Instructions
  1. Preheat the oven to 180 degrees Celsius.
  2. Grease two 20cm round cake pans {you can use 1 and just divide the mix}.
  3. Place the bananas in a bowl and mash with a fork until smooth. Add the oil, vanilla, sour cream and eggs and whisk until combine.
  4. In a separate bowl, sift together the flour and baking soda.
  5. Whisk the wet mixture into the dry mixture and beat until combined.
  6. Pour the batter into the prepared pans and bake for 45- 50 minutes or until a skewer comes out clean.
  7. Allow to completely cool before cutting each cake into 2 layers, giving you a total of 4 layers.
  8. Prepare the frosting and the salted caramel according to the links above.
  9. Place 1/3 of the frosting into a large zip lock bag and cut off about 1cm of one corner of the bag.
  10. Place one layer on a cake stand or plate and make a dam with the frosting {see the images above}.
  11. Fill the damn with about 1/4 cup of the salted caramel and add the next layer, pressing down so the dam frosting spills out.
  12. Repeat with remaining layers.
  13. Frost the entire cake and serve!
Notes
  1. You will have about a cup of the frosting left over and about 1/2 cup of the salted caramel. No biggie, right?
