Spelt and Apple Pop Tarts

My Brother was obsessed with Pop Tarts when we were growing up. In fact, I would say he is still obsessed with them now. I remember on rare occasions we would have a box of Apple and Cinnamon Pop Tarts in the cupboard which he would easily knock off on a Saturday morning.

Now, years later, if I come across some Pop Tarts in a Lolly Shop I’ll always grab a box to give to my Brother. I’ll do this for his other favourites too; Dr Pepper, Reeses Pieces and Jolly Ranchers. It’s safe to say his obsession extends beyond Pop Tarts to all American food.

It’s pretty surprising that Pop Tarts are intended to be a breakfast food. I mean. Really? So, in an effort to cater to my Brother’s love of American food, I did some work to make these Spelt and Apple Pop Tarts for this weeks Friday Foodie Flashback. The lovely and early spelt pastry is so delicious with the warm and spicy apple. These are quick and simple to make, and great for a dessert with some luscious cream. Or, maybe you will eat them for breakfast, that’s cool too.

 

SPELT AND APPLE POP TARTS

FOR THE PASTRY
  1. 250 grams of spelt flour
  2. 140 grams of salted butter
  3. 1 tablespoon of brown sugar
  4. 1 large egg
FOR THE FILLING
  1. 2 granny smith apples
  2. 1 tablespoon of brown sugar
  3. 20 grams of butter
  4. 1 teaspoon of mixed spice
Instructions
  1. Place the flour, butter and sugar in a food processor.
  2. Pulse until bread crumbs are formed.
  3. Turn to high, and with the motor running, add the egg very slowly. You may not need all the egg.
  4. When the dough forms, cling wrap and set aside in the fridge.
  5. Preheat the oven to 180 degrees Celcius.
  6. Chop the apples into 1cm cubes.
  7. Heat the butter in a pan on a medium high heat and add the apples once the butter is foaming.
  8. Add the sugar and mixed spice and toss until apples are slightly softened.
  9. Allow the apples to cool while you roll out the pastry to about 5mm thick between two sheets of baking paper.
  10. Cut the pastry into 10, 10 x 5 cm rectangles (approximately!).
  11. Place the cooled apples on one rectangle, then top with another, using a fork to seal the edges.
  12. Prick the top if the pop tart with a fork and bake for 20 minutes or until browned.
  13. Serve with ice cream or cream!
Notes
  1. These would be great with a range of fillings- Nutella, berries or jam!
  2. This spelt dough had a really earthy flavour and texture- you could make a regular short crust pastry.
